Peppermint Patty Cupcakes

Ingredients (makes 12 cupcakes, or 2-layer cake)

  •  Chocolate batter (please note: you may substitute the sorghum flour & potato starch with 1 1/2 Cups of the flour of your choice {wheat, GF blend}; if you are making these with wheat flour, omit the xanthan gum):
    • 3/4 Cup sorghum flour
    • 3/4 Cup potato starch
    • 1 Cup sugar
    • 1 Cup non-dairy milk
    • 1/2 Cup apple sauce
    • 1/2 Cup cocoa powder
    • 1/2 Cup flaked coconut
    • 2 Tablespoons maple syrup
    • 1 Tablespoons xanthan gum or ground chia seeds
    • 1 teaspoon peppermint extract
    • 1 teaspoon vanilla extract
    • 2 teaspoons baking powder
    • 2 teaspoons apple cider vinegar
    • 1 teaspoon baking soda
    • 1/4 teaspoon sea salt
  • Peppermint Butta Cream:
    • 3 1/2 Cups confectionery sugar
    • 1/2 Cup veg shortening or coconut oil (room temp.)
    • 1/4 Cup non-dairy butter
    • 1/4 Cup non-dairy creamer
    • 1 1/2 teaspoons peppermint extract


  1. Preheat your oven to 350 degrees Fahrenheit.  In a large mixing bowl combine your sorghum flour & potato starch, cocoa powder, sugar, salt, baking soda, baking powder, xanthan gum, and stir until blended.  Mix in your non-dairy milk, apple sauce, maple syrup, vanilla extract, and stir until fully combined.
  2. Line your cupcake tin with paper liners and spray with non-stick spray.  Fill each tin 3/4 full and pop them in the oven for 20-25 minutes.  {While your cupcakes are baking prepare the butta cream! } Insert a toothpick into the center of your cupcake & if it pulls out clean, the cupcakes are done!  Let cool.
  3. To make the peppermint butta cream, in your stand mixer combine the shortening, butter, sugar, non-dairy creamer, peppermint extract, and mix on low-medium speed.  turn the mixer up to medium-high speed and blend until your butta cream has soft fluffy peaks.
  4. One your cupcakes are done baking, be sure they are cooled down to room temp before you add your butta cream!  Once they are cooled, pipe your cupcakes as you wish!
