Apple Pecan Muffins

Ingredients (makes 1 dozen):

  • 1 Cup non-dairy milk
  • 1 Cup raw pecans, lightly toasted in your oven & roughly chopped
  • 3/4 Cup sorghum flour
  • 3/4 Cup potato starch (NOT flour!)
  • 3 apples, diced into 1/2 inch squares
  • 1/2 Cup sugar
  • 2 Tablespoons ground flax meal whisked with 6 Tablespoons warm water, set aside for 5 minutes until it becomes a gooey egg-like consistency
  • 2 teaspoons baking powder
  • 2 teaspoons xanthan or guar gum (if you cannot tolerate gums replace with 2 teaspoons of ground chia seeds)
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg


  1. Preheat your oven to 350 degrees Fahrenheit.  In a large mixing bowl combine your sorghum flour, potato starch, sugar, baking powder, gum (or ground chia seed), ground cinnamon, nutmeg, and stir to combine.  Add your non-dairy milk, flax meal mixture, vanilla extract, and stir until well mixed.  Toss in your diced apples and chopped pecans and stir to incorporate.P1160428s
  2. First things first, grease those muffin tins!  Fill each muffin tin to the top and pop them in the oven for 20 – 25 minutes, until golden. To ensure proper baking, insert a toothpick into the center of a muffin and if it pulls out cleanly they’re ready (just remember, the apples will be moist on the inside).
