4 medium potatoes (pictured are yellow potatoes), grated
Cooking oil / non-stick spray
Preheat your oven to 425 degrees Fahrenheit. It is very important to grease your muffin tins well as we need our nests to pop out of the tins with ease!! I used grape seed oil on a paper towel and liberally greased each muffin tin (feel free to use easy non-stick spray!).
In each muffin tin, add at least 2 Tablespoons of your grated potatoes and gently press into each muffin tin (be sure to press them up the sides!!). Bake for about 25 minutes, until golden. They should pop right out of each muffin tin when ready, but if they are giving you a little bit of trouble, gently use clean hands to help the nests escape!
